MasWine Coume del Mas, "Quintessence", Banyuls AOC, 2001
"Quintessence", 2001 - an impressive sweet red wine made from Grenache grapes only in the best harvest years. Grapes grown in the famous for its fortified aperitif and dessert wines appellasone Banyuls in the western part of Languedoc-Roussillon. Banyuls vineyards are located above the sea on the mountain terraces. In hot and dry climates, grapes ripen fully and shows a high level of sugar, which eliminates the need for extra added sugar in sweet wines. "Kvintessens" made from low-yielding crop with old vines from the best vineyards of the economy. Used production process, similar to the port, known in France under the name "mutage". To strengthen the beverage alcohol is added to the wort to stop fermentation at a time when the natural sugar level is still high. Then the wine is aged in oak barrels for a year. As a result, the wine has a great similarity with port, but generally has lower levels of alcohol (20% and 16%). Sweet wine of Banyuls can be stored up to 30 years.
